5 Ingredient Chicken Fingers

I got this recipe from my 5 ingredient recipe cookbook, which I LOVE! Super simple and super yummy!

Boneless, skinless chicken breasts (2-4)
1/2 cup seasoned bread crumbs
1/2 cup mashed potato flakes
1 egg*
olive oil

Flatten the chicken breasts and then cut into 1-inch strips. First roll the chicken in the egg or egg substitute [*I ran out of eggs so I actually used low fat ranch dressing, which turned out awesome!]. Then roll the strips in the bread crumb/potato flake mixture. Cook in the oil in a frying pan. Yum!
